Pomegranate Slush
Total time needed: 8-10 minutes
Ingredients
1 – 1½ cups (250 ml – 375 ml) fresh pomegranate seeds
2 cups ice (2 x 250 ml)
¼ – ½ cup (125 ml) simple syrup (adjust according to taste)
1 small lemon
Pinch of salt
Method
Place all the ingredients in a blender except the lemon. Use the pulse action and blitz a few times until the ice breaks down. Pour into a serving glass followed by a good squeeze of lemon juice. Stir and enjoy.
To make a simple syrup you will need equal parts of sugar and water and bring to a boil just until the sugar dissolves (do not let it crystallise) let it cool before adding to the slush. There are times when I’m in a hurry and just mix ¼ cup white sugar with ½ cup water and stir until the sugar is dissolved.
