Roasted Tomato Soup with Gourmet Toasted Cheese Sandwiches

Ingredients
6 large red tomatoes
1 whole garlic clove - peeled
Sprig of rosemary
Olive oil
Salt and pepper
250 ml cream
1 cup cheddar cheese
50 ml basil pesto
4 slices white bread
Butter for spreading
 
Method
  1. Preheat oven: 180 °C.
  2. Place tomatoes, garlic, salt, pepper and rosemary in baking pan. Roast for approximately 40 minutes. 
  3. Blend roasted tomato mixture until smooth.
  4. Put liquid in a pot and bring to the boil.
  5. Stir in 230 ml of the cream and simmer till thick and warmed through. 
  6. Spread the bread, on one side only, with butter.
  7. Spread two slices on the opposite side with pesto and top with cheese.
  8. Close with the other slices to form two sandwiches (butter side out).
  9. Grill until golden in a hot pan, turn.
  10. Slice into triangles and serve with the warm soup.
  11. Drizzle the soup with the remaining cream to decorate.
