Easy Orange Jelly Dessert for Spring

My paternal grandmother and name sake was a gentle and kind person. The only time she put her foot down (quite ironically) was when the doctors told her that she would have to have her leg amputated because of gangrene. She point blankly refused, in her calm way. After much to-ing and fro-ing the doctors saved her leg. This recipe comes from her. She was someone who never used any measuring jugs or spoons but cooked and baked by feel. Difficult for my mom who was a very precise baker.

To be honest I haven’t made this recipe recently but will definitely need to give it a try in the next couple of weeks. Enjoy.

Ingredients

·         1 packet orange jelly

·        200 ml boiling water

·        1 tin evaporated milk (standard size), chilled

·        1 orange, juiced

Method

Open jelly packet, add powder to bowl and add boiling water. Stir to dissolve. Place bowl in fridge, allow jelly to cool and start to thicken.

Whisk chilled evaporated milk and orange juice together in a mixing bowl until thick and frothy. Add the jelly and whisk again until the mixture is smooth.

Chill in the fridge until set.
